Ingredients

1. Basmati Rice - 3 cups 2. Lime - Juice from 3 3. Fresh grated Ginger 1 inch 4. Salt - to taste 5. Turmeric - 1 tsp 6. Ghee - 2 Tbspn 7. Channa Dhal - 3 tbspn 8. Mustard Seeds - 1-1/2 tsp 9. Dry Chillies - 4 10. Asafoetida - 1/4 tsp 11. Curry Leaves - 3 tbspn 12. Coriander leaves - 3 tbspn

Preparation

1. Cook the rice as usual, with a tablespoon of butter.

2. Put the finely chopped green chillies, ginger, salt, turmeric, and lime juice in a bowl and stir well.

3. Sprinkle it over the cooked rice and stir gently with fork until the grains are coated, then set aside.

4. In hot ghee fry the channa dhal till lightly browned, then add the dry chillies, asafetida, mustard seeds, and curry leaves.

5. When mustard seeds splutter remove and pour the seasoning over the rice mixture.

6. Stir again well, garnish with chopped coriander leaves, and offer.
